Cookie Icing Sandwiches (A.K.A. “Mockaroons”) *12 Days of Christmas Snacktivities Day 4*

THIS IS MY 100TH BLOG POST!!!! 😀 So cool! In honor of this momentous occasion, I will be having a giveaway! See the end of this post for info on that 😉

For day 4 of this series I am sharing how to make something prettty delicious and easy- as usual. I call em “mockaroons” beacuse they kind of look like french macaroons, but they are really just cookie sandwiches that are made with icing.

I just need to start off by acknowledging that I am aware that most of my snacktivities are really not too fancy. This isn’t any Martha Stewart Christmas Baking blog… maybe next year when I’m not juggling autism and morning sickness i’ll tackle that one- HA! These sugary sweets use the quickest ingredients and involve a lot of cheater supplies. And I’m okay with that- because I want to keep this fun and simple and quick, so these little activities are perfecto to do with the kids! And I also know they are full of sugar and processed crap. Okay that was my disclaimer… Let’s just say Day 4 involves some store-bought icing…

IMG_7265…and some other store-bought things! Nilla wafers, and some decorations- like chocolate sprinkles, and candy canes.

This is really easy and fun for the kids- probably the one that they had the most fun with, because all you do, is sandwich some icing between two cookies like so:

Of course you can get a bit fancier than that…

IMG_7269You can make a star or a swirl… but in the end…

IMG_7272…you wont be able to tell what you did if you roll it in a pile of sprinkles!

Get creative with the decorations…

IMG_7275My kid’s fave thing to do was use these terrible silver balls. Who invented these things?!?!

MY favorite thing to do was to crush some candy canes like so:

IMG_7279And then dip my perfect mockaroons into their pepperminty treatment.

I suppose the swirled icing looked pretty good without extra decorating too!

Now HERE is a modified version of these that I have to admit- is pretty… embarrassingly simple… it might border on unnecessary to share hahaha. But let me tell you, it satisfied all kinds of cravings!

IMG_7213So…they got a room… in the microwave in 20 second intervals, until the chocolate was just squishable.

IMG_7214And two became one. Well I don’t know where that analogy came from. Sometimes my mind pulls out the strangest things at midnight!

Cinnamon Sugar Vanilla Pretzels *12 Days of Christmas Snacktivities Day 3*

For day 3 of my 12 Days of Christmas Snacktivities, I will be sharing one of my husband’s favorite treats:

IMG_7260Cinnamon Sugar Vanilla Pretzels! These are kind of a joke to make… as in they are easy… like all my snacktivities are 😉

I got this idea and adapted the recipe from this website I found through Pinterest.

IMG_7231This really is as easy as opening up a bag of pretzels and coating it with a few magical ingredients. I used the same ratios as the original recipe, but I melted some butter (vegan margarine) instead of using oil, and I added some vanilla to make them extra special.

Here is the recipe:

-1 bag of pretzels (16 oz)

-2/3 cup melted butter

-½ cup sugar

-2 tsp cinnamon

-2 tsp vanilla extract (Just use the cheap fake stuff- I saw America’s Test Kitchen do a taste test and the fake stuff won every time! In my opinion the real stuff is only necessary if it has those lil vanilla bean flecks in it and you are using it for icing or ice cream.)

So preheat your oven to 300 degrees, and get mixing!

IMG_7238Step 1: Mix everything together in a bowl.

IMG_7247Step 2: Spread on a single layer on a baking sheet.

IMG_7256Step 3: Bake at 300 degrees for around 20 minutes. Stir em around every 7 mins.

SIDE NOTE- these things smell SO GOOD when they are baking. (I know I said there would be no baking in my snacktivities, but this doesn’t count right!?!?! It’s more like creating an air freshener while waiting for your snack to be done…)

IMG_7294Step 4: Let cool and enjoy! They are so delicious. I want to eat them all. These would make a pretty cute little food gift- they’re kinnnda gourmet if you ask me!

IMG_7317Just stick a handful in a clear bag, add a candy cane and bow, take a cruddy picture and there you go!

Rice Krispie Trees *12 Days of Christmas Snacktivities Day 2*

Look upon Day 2 of my 12 Days of Christmas Snacktivities:

Rice Krispy Trees -Busted ButtonNeed I say more? I guess I should probably explain how to make em! As usuallll, these are easssy quick and fun! Get the kiddos and get started!

Step 1: Make Rice Krispy Squares. IF you don’t know how, check out the recipe here. I always add twice as much vanilla and I use vegan margarine instead of butter. For these festive trees, I used the Christmassy Rice Krispies, but you can use any kind- even the generic brand 😉

IMG_7218I’ve only made Rice Krispie Squares once before- crazy, I know, but it’s for a reason- I love them too much. I would take one of these vanilla-y, buttery squares over any sort of baked good any day. If I make them, I eat them. All. All of them! So when I made these, I made sure they had a destination. And that, readers, is how I don’t weigh 300 pounds. If I ever make any sort of treat, I make sure that most of them have a destination (that doesn’t involve a pitt-stop in my belly.)

IMG_7223Step 2: Form the Rice Krispies into a (GREASED!) cookie sheet, let set, then remove onto a cutting board. IMG_7239

I was so tempted to just pick this up and eat it like a gigantic cookie. I resisted. This time.

IMG_7253Step 3: Cut the squares into… triangles! Any old triangle will do, but at least try to make a tree- looking shape 😉 Oh, and eat every single little imperfect scrap. Mmmm.

IMG_7254That made a lot of triangles. And a lot of scraps…which are not pictured here, as they took the pitt-stop at my belly.

IMG_7255Step 4: Shove a popsicle stick into the bottom of your tree as far as you can!

IMG_7258Step 5: After you stab the whole forest, melt some chocolate (I used dairy-free chocolate chips, but you can use any kind of chocolate chip or melting wafer) in 20 second increments in the microwave, and get ready to dip!

IMG_7261Step 6: Dip the forest and lay them on a parchment paper-lined tray.

I decorated most of them with M&M’s- I left some for me without those so I could eat them without my guts complaining.

Step 8: Allow to dry- I never have patience at this part so I just stick em in the fridge for 10 minutes.
