My Fave Tea Sandwiches!

I’ll pretend this post is in honor of the London Olympics, but really I just had a mad pregnancy craving that needed to be satisfied!

Cravings are funny because they can be so random! One morning a friend asked me if there were any foods that made me sick just to think about and I said ‘eggs.’ And then I puked. But that very same afternoon, I got a hankering for the BEST egg sandwich I have ever tasted! It wasn’t the usual boring old egg sandwich… It was a recipe from Oprah’s website, which you can find here. But I made it better, because I am better than Oprah. Seems like my blog would get deleted for saying that. Heheheh.

Since I was in a sandwichy mood, I thought I’d also whip up the best chicken salad in the world. So follow me on a British journey, into the land of tea sandwiches!

Mmmmm droool. Satisfying a pregnancy craving is one of the best feelings in the world, even if after 2 bites you are over it. Let’s start with the egg salad:

Oh.My.Goodness. Egg and bacony heaven! The only things I really changed about Oprah’s recipe was that I used maple bacon instead of normal bacon and I used honey dijon mustard instead of plain dijon. Oh and I used half as much mayo… I think Ms. Winfrey likes her mayo a bit too much. Here is the recipe:

  • 4 hard-boiled eggs, chopped (I used good-quality eggs-none of those cheap, pale yellow Walmart eggs here! I save those ones for baking lol.)
  •  3 tablespoons mayonnaise , plus more for garnish
  • 1 tablespoon honey Dijon mustard
  • 1 tablespoon (scant) chopped tarragon
  •  salt and freshly ground pepper , to taste
  • 5 strips maple bacon , cooked until crisp and then broken into small pieces
  • 16 slices very thin whole wheat or white bread
  • Chopped chives and parsley , for garnish

Now for the chicken salad recipe:

This is such a unique and refreshing sandwich filling! It tastes so good- trust me.

  • 1 cup diced chicken (I used some leftover fried chicken from the night before, and used that as an excuse to eat 500 calories worth of deep-fried skin but you can use any type of cooked chicken.)
  • 1/3 cup red grapes, cut in quarters
  • 1/3 cup cucumber, chopped (Or you can use celery-you just need something crisp and refreshing!)
  • 3 tablespoons of mayo (or you can use 6 if you are Oprah.)
  • 2 green onions, diced
  • salt and pepper, to taste.

After you’ve mixed up your fillings, you can start constructing the sammies!

For the chicken salad sandwiches I used really thinly sliced sourdough bread. It was a cute lil round loaf, and it suited my tea party perfectly!

(As though I need to explain how to construct, then cut a sandwich!) Here is a step-by-step photo, in case you have never made a sandwich before. Heheheheh.

For the egg sandwiches, use 2 tablespoons of the filling and pile it onto very thinly sliced white bread, then remove the crusts. I fed those to my kids for breakfast…what?!! It’s carby, bacony, eggy goodness! I served it with some chili mayo to dip it in and my kids thought it was pretty special. Mwahaha, little did they know, they were eating scraps!

This garnish was my favorite part- swipe one side of the sandwich with a teensy bit of mayo, and dip it in your chopped parsley and chives.

Mmmm tea sandwich glory! This made enough sandwiches to feed 4 hungry adults and 4 kids!

Let’s zoom in on this perfection. Mmmmmm. Those were good. Now I am drooling.

Summer Button Coasters!

So, Arrow Sewing Cabinets posted a contest inspired by the cutest coasters I’ve ever seen! Check out these great citrus felt coasters that were created by a genuis over at The Purl Bee:

Gah-So cute!!! So the contest is to make a set of four fruit-inspired coasters! I was instantly inspired by my medium of choice- BUTTONS!

So here is what I created! A slice of watermelon, kiwi, apple and lemon. These were really fun to make, so lemme show you how I did it!

First I drew out a sketch of some fruit that I thought would work with the buttons. For the base of the coasters I used some tacky monogramed coasters I got for 10 cents at the craft store. I’m guessing the unreadability of the letter was part of the reason they were marked down so much. I think that’s supposed to be a ‘J’?!? Anyways, I snatched em up to save for a time like this!

I used a compass to mark out the borders/rinds of the fruit slices. I don’t thing I’ve used one of these since Math 10. Nostalgia! I guess they were right when they corrected me whenever I’d complain “whennn am I ever gonna use this?” Well, Mr. Erickson, you shoulda responded with “It will come in really handy if you want to make some fruit-inspired coasters out of buttons in 12 years.”

Next I quickly colored in the coasters with whatever I had kicking around- pens, crayons, and pencil crayons. This was an important step, because I wasn’t planning on overlapping the buttons (I knew I’d fall victim to a wobbly glass accident!), so I wanted the background that would show through to match.

Then I simply used some white glue (the kind that dries clear) to glue my buttons on, then waited for the glue to dry.

That’s a pretty cute stack of coasters, I’d say!

They look so perfect with a jar of water and food coloring, don’t they? 😉

My sister just pointed out that the blue water reminds her of a maxi pad commercial. Hehe sorry for that!

Well, wish me luck- I’ve already won a buttony contest there before, so I don’t even know if I qualify, but that’s okay, cuz I got some pretty cute coasters out of the deal!

Wordless Wednesday: Nuclear Beauty

 

Morning sickness has gotten the better of me so I am officially a lame blogger for the past few and next few weeks! But I wanted to show off my fave painting as of late- I love the contrast of the beautiful bright button tree blowing in the wind along with the steam from the nuclear reactors. Creepy. ‘Ashes into beauty’ is a kick I’m on right now… I’ll go into more detail about that soon 😉
