Christmas Peppermint Patties *12 Days of Christmas Snacktivities-Day 10*

Today I am sharing a twist on my peppermint patties that I made way back when… For the exact recipe check out that old post here. 

For my 10th day of Christmas snacktivites I put a festive spin on those delightful chocolates (that taste JUST like the store-bought kind- and can easily be made dairy-free while remaining equally delish!)

IMG_8266Mmmmm peppermint popsicles and christmas treeees. Not only did I decorate these in a Christmassy manor, but I also added a holiday touch to the inside of them! Let’s get started!

IMG_8228After I made my peppermint patty dough, (SO EASY!!!!) (And I used honey instead of corn syrup this time and it worked just as well) I divided it into two halves, and colored each one with a bit of coloring:

IMG_8229Then I kneaded the coloring in until it was evenly distributed like so:

IMG_8230Oooh. Even.

IMG_8232Next I took small sections of the dough and rolled em into snakes.

IMG_8233Then I did the twist.

IMG_8235The peppermint twist 😉 I gave it a lil extra roll.

IMG_8236And I turned it into a spiral that no lollypop stick could deny!

IMG_8239Next I got stabby.  And while these babies were hardening up in the fridge for 10 minutes, I started on my peppermint trees.

IMG_8241I wanted these trees to have a striped inside, so I laid out a few snakes (on parchment paper)

IMG_8243And rolled them to around an 1/8th of an inch thickness, with another piece of parchment paper on top to prevent sticking.

IMG_8244Pretty! I stuck that in the fridge for 10 mins as well, and prepared to dip my peppermint lollypop patties!

IMG_8247I just melted some chocolate in the microwave (see original pep. patty recipe for detailed instructions on that), crushed the life out of my 100th candy cane of the year, and proceeded to cover the lollypops in chocolate!

IMG_8248Like that! When the chocolate was still wet, I sprinkled the dead candy cane over it. More pictures of that to come, but first…

IMG_8250Back to the striped trees! I cut a simple 1.5″ triangle shape out of the refrigerated peppermint dough…

IMG_8251and with a fork and a paintbrush I covered both sides in chocolate, as cleanly as I could.

IMG_8252It was definitely a bit messy, but after these guys hardened, it was so easy to remove the excess chocolate.

IMG_8255I added some crushed candy cane and a candy cane ‘trunk’ – HOW CUTE?!?!

Then I realized… I hadn’t gotten my kids involved yet! Good thing I had some scraps 😉

IMG_8256We rolled the scraps into little balls like this.

IMG_8257And then dipped em and decorated em like that!

They had a blast and did a surprisingly good job!

IMG_8260Once everything was dipped and decorated, they went back into the fridge for 5 minutes, until the chocolate was hardened.

Then it was time to enjoy our bounty!!!

Dipped Candy Canes (Hot Chocolate Stir Sticks) *12 Days of Christmas Snacktivities-Day 9*

Today, on the 9th day of Christmas Snacktivities, I am sharing one of my personal favorites:

IMG_8200Chocolate-dipped Candy Canes!! These are perfect for eating the way they are, but really, they are as a stir stick for your hot chocolate! GENIUS IDEA! Thank you, Pinterest!

A couple of days back I posted my homemade hot chocolate recipe. It is super easy, and you will probably never buy the pre-made stuff again! So check that out, grab a kid to help you, and then make these!!!

IMG_8191This was my helper of the day. Don’t let his blank stare fool you, he was super excited to make these simple treats! Okay, he wasn’t really, but he was pretty excited that he just dumped a container of sugar all over himself and my house. ASHERRRR! Oh well, have some chocolate chips, son, and observe this magic!

IMG_8194Allll you need to make these decked-out candy canes is some melted chocolate (white, dark, or both), some decorations if you’d like (I used chocolate sprinkles and crushed candy canes), and… candy canes… obviously.

IMG_8195Step 1: Dip the candy cane in melted chocolate.

To melt the chocolate, just stick your chips, chunks or wafers in a microwavable bowl, and nuke it in 20 second intervals until it is JUST melted.

IMG_8197Step 2: Roll the dipped chocolatey ends into your decorations and place on a parchment paper-lined tray.

IMG_8198You can also use the contrasting chocolate to shake some class onto your candy canes like that!

IMG_8199Step 3: Refrigerate for 5 minutes, or until the chocolate has hardened, and serve on a Christmassy plate…

IMG_8206…or you could break out the mason jar if you want to be a real mom-blogger. Isn’t this a cute little hot chocolate station? I just unpacked our Christmas mugs today! Growing up, everyone in my fam had their own Christmas mug. (That was a lot of freaking mugs.) And when I first got married, my mom gave me and the hubby a couple of our own, and so we’ve carried on the tradition with our kids!

Christmas Brownie Bites *12 Days of Christmas Snacktivities- Day8*

For day 8 of 12 Days of Christmas Snacktivities I am sharing something pretty cute and versatile:
IMG_8171Mmmmm baby. How sweet are these little santa hat brownie bites? And they involve fruit! SO HEALTY! I used all cheater ingredients to make these- because when I’m busy at Christmastime I’d rather spend time having fun than measuring! And follow this tutorial for some other super easy ideas along these lines… so let’s get started!!!

IMG_8161 Alll ya need for this snacktivity is some two-bite brownies (or whatever they call those mini brownie bites where you live), a tub of store bought cream cheese icing (or any icing or even whipped cream!), strawberries, and assorted candies for decorating!

IMG_8162 It made me a bit crazy that there were 17 brownies in the bag… way too random. PS these brownies happen to be DAIRY-FREE! The icing isn’t, so I had to eat brownie #17 before I tainted it.

IMG_8165 Strawberries are not in season this time of year- so I could only find them in one store! ANNND they were so expensive. These stupid strawberries were almost ONE DOLLAR EACH!!! Hubby picked em up for me- it’s his fault.

Back to the tutorial

Step 1: Clean and trim the tops off of the strawberries. All four of them 😡
IMG_8166 Step 2: Swirl or spread some icing onto the brownie bite. I used a pastry bag and the big old 1M tip.

IMG_8167 Step 3: Top with a strawberry, and dollop some icing on top to finish the hat off!

Well, since I only had 4 strawberries to work with, I needed to improvise!

IMG_8172 I racked my brain trying to figure out what I could squish on top of these iced brownies!

And I remembered my stash of big, cheap, sugary Christmas bell jelly candies!

IMG_8174 A party mint ‘star’. Those pass off as Christmas trees right?!?

I had some red bells too, so I made some less-healthy (ha!) Santa hats while I was at it:

And that leaves us with only FOUR more days of Christmas Snacktivities!!!! (And that means only 16 more days until Christmas!!!! AHHHH so exciting!
